A quick and easy dip recipe that makes a great healthy lunch or a stress-free starter before a main course: Ingredients: 1 can of chick peas 1 can of borlotti beans 1 can of cannellini beans 3 tablespoons of Tahini 3 cloves of garlic, grated or crushed 3 teaspoons of ground cumin 3 teaspoons of lemon juice (fresh if possible) Extra virgin olive oil Salt and pepper Method: Rinse the beans and chick peas and put them in a blender. Add the Tahini, garlic, cumin and lemon juice and about 3 or 4 tablespoons of oil and blend together. Add more oil until you achieve a nice consistency (it can be as smooth or as coarse as you like, depending on personal taste). Finally, add salt and pepper to taste. SIMPLE! Notes: Don’t worry if you can’t get the exact bean varieties - a mix of any two types of bean along with chick peas will work just fine. All the other ingredients can be adjusted to suit your own palette - you may find that the pungent garlic hit that we like is too much for you, or that you’d rather replace a little of the oil with water - just go with what tastes right to you and ENJOY!
